INGREDIENTS

1 15-oz can of drained chickpeas (Costco sells organic canned chickpeas by the 8-pack; save the aquafaba liquid)

1/3 cup aquafaba (chickpea water from the can) or regular water is ok

4 cloves garlic (air-fried in your air-fryer to reduce the pungency; grilled is fine too)

3 tablespoons olive oil + finishing touch

Juice from 1 lemon

1 tablespoon almond or peanut butter (in place of tahini)

1/2 teaspoon cumin

Salt to taste

Minced parsley – finishing touch

Paprika – finishing touch
PREPARATION

Chop garlic after air-frying it.

Add drained chickpeas, aquafaba, chopped air-fried garlic, olive oil, lemon juice, almond or peanut butter, cumin and salt to a bowl (or food processor/blender). Puree until creamy – I use my immersion blender so I can serve the hummus directly from the bowl.

Spoon hummus into a fancy swirl. Drizzle with olive oil, and top with parsley and paprika.
